Air Fryer Potatoes Recipe

Make perfect potatoes in the air fryer in under an hour using herbs and spices you likely already have on hand. We make these potatoes at least once a week. They’re so easy and flavorful with a beautiful golden crisp exterior and a perfectly cooked interior. The fresh parsley and Parmesan cheese is optional, but adds a great balance and freshness to the dish.

From start to finish, this recipe takes just 40 minutes—no boiling required! Using the air fryer creates a super crunchy coating with much less oil than frying or even baking, and the seasoning blend pairs well with just about any main dish. To change up the flavor of these potatoes, try different spices and seasoning blends. If you do choose to either drizzle a sauce on top of the potatoes or offer one on the side, I recommend making a really good one like garlic aioli.

Ingredients 

  • 2 pounds yellow skinned potatoes cubed, no need to peel, avoid waxy potatoes like reds or fingerlings
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon dried minced onion
  • 2 teaspoons garlic powder
  • 2 teaspoons ground paprika
  • 2 teaspoons ground mustard
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • fresh parsley optional for garnish
  • grated Parmesan optional for garnish

Instructions 

  • Cube the potatoes and place them in a large mixing bowl. Add 3 tablespoons of olive oil to the bowl and stir to evenly coat.

  • In a small bowl mix dry ingredients.

  • Pour the dry ingredients into the large bowl with potatoes and stir again to coat evenly.
  • Place potatoes into air fryer basket.

  • Cook at 370°F for 20-25 minutes or until golden and crispy on the outside. Be sure to shake the basket about halfway through the cooking time to ensure the potatoes are being cooked evenly.
  • Garnish with fresh parsley and freshly grated Parmesan cheese (optional) and enjoy!

How to Make Air Fryer Potatoes Step by Step

Cube the potatoes: Place 2 pounds of cubed yellow skinned potatoes in a large mixing bowl. Add 3 tablespoons of olive oil to the bowl and stir to evenly coat.

How to Store

Once the potatoes have cooled to room temperature, store them in an airtight container in the fridge for about 3-4 days. To maintain their original consistency, reheat them in the air fryer at 350°F for about 4-5 minutes.

You can freeze air fryer potatoes in an airtight container for up to 3 months. Before reheating, I recommend letting the potatoes thaw completely in the refrigerator.

Serving Suggestions

These are great with so many main dishes. They are perfect with large celebration dinners, like a Prime Rib Roast or a Whole Roast Chicken, as well as easy weeknight meals, like our favorite Blackened Salmon or Garlic Herb Turkey Breast.

To shorten cooking time I put cut potatoes in a covered bowl and microwave a few minutes about 4 for a bowl full, and then drain water and add oil and spices
