I’ve finally learned the secrets of how to cook bacon in the oven! That’s right, I have the mess-free method for cooking tons of bacon in bulk. Armed with just a baking sheet, some aluminum foil, and a pound of bacon, cooking bacon in the oven has never been easier. It frees up time and stove space to make other breakfast favorites. Plus, I don’t have to scrub down my whole kitchen anymore!

It’s always a treat any time I make bacon because it’s so messy and time-consuming to cook it on the stovetop. But since I learned how to cook bacon in the oven, it’s been appearing on our breakfast table much more often. This recipe for bacon in the oven is quick, easy, and mess-free, leaving me more time to spend with my family!

Tips for Beginners

  • If you want to skip the foil lining, you can! But it does considerably cut down on dishwashing time.
  • If your bacon is super fatty, it may start to smoke. I recommend starting it in a cold oven to prevent smoking/burning.
  • Save the bacon grease, strain it through a coffee filter, and use it to cook with. It works well in any recipe that calls for oil.

When I’m in the mood for something a little extra at breakfast, this brioche French toast is my go-to. It’s rich, fluffy, and pan-fried to golden perfection—with a crisp edge and a soft, custardy center that feels like a total treat. I’m planning to make it for Easter morning this year, and I have a feeling it’ll be making another appearance for Mother’s Day brunch too. Thick slices of buttery brioche make it feel special, but the best part? It’s surprisingly simple to whip up with ingredients I almost always have on hand.

Overhead view of brioche French toast with butter, whipped cream, fresh raspberries, and maple syrup on a white plate.

My family loves French toast, and while I often turn to a baked French toast casserole when I’m feeding a crowd or want to prep ahead, this pan-fried version is my favorite for a cozy weekend breakfast. It’s the kind of recipe that feels like a treat but is simple enough to pull together without a fuss.

Tips for Beginners

  • Dip, don’t soak the bread. Brioche is soft and absorbent, so a quick dip on each side is all you need. Soaking the bread too long can lead to soggy slices that fall apart in the pan. Aim for a few seconds per side to get that creamy center without losing structure.
  • Cinnamon tends to clump in liquid, so mix it vigorously or even sift the cinnamon in to help it distribute evenly throughout the custard.
  • Medium heat is your friend—too hot and the toast will burn before the inside cooks; too low and it won’t brown properly. Give your pan time to preheat so each slice gets an even cook.

How to Cook Brioche French Toast Step by Step

Brioche French Toast ingredients

Gather the Ingredients: Gather all the ingredients together.

Shallow white dish filled with egg and milk custard mixture, surrounded by brioche slices, raspberries, butter, and whipped cream.

Make the custard mixture: In a medium-sized bowl, whisk together ¾ cup milk, 3 eggs, 2 tbsp sugar, 1 tsp vanilla extract, ½ tsp cinnamon, and a pinch of salt. Pour the mixture into a shallow dish for dredging. Warm a large skillet over medium heat. Add a couple pats of butter and swirl to coat the pan evenly.

Brioche slice being dipped into custard mixture with tongs, surrounded by ingredients like butter, raspberries, and whipped cream.

Dip the brioche: Dip each slice of bread into the custard, flipping it to coat both sides evenly. Gently let any extra custard drip off before transferring the slice to the hot skillet.

Two slices of brioche French toast cooking in a skillet, golden brown and crisping on the edges.

Cook until golden: Cook the French toast for 1–2 minutes per side or until golden brown and crisp on the edges. Repeat until you’ve cooked all your brioche slices.

Fully plated French toast with raspberries, whipped cream, butter, and powdered sugar, surrounded by extra toppings and gold utensils.

Add toppings and enjoy: Serve warm with maple syrup, fresh berries, powdered sugar, and a dollop of whipped cream. Enjoy!

How to Store and Reheat

There are rarely leftovers in this house, but if I have a few extra pieces, I place them in an airtight container and eat them within 2-3 days. To reheat, I either pop them in the toaster oven or warm them up in a skillet over medium-low heat with a touch of butter—just until heated through and lightly crisp on the edges. The microwave works in a pinch, but the texture won’t be quite the same.

You can also freeze slices by laying them in a single layer on a baking sheet until solid, then transferring them to a freezer-safe bag. Reheat straight from frozen in a skillet or toaster oven for an easy, make-ahead breakfast.

Serving Suggestions

My favorite way to indulge in this breakfast is with a generous slab of butter, a drizzle of pure maple syrup, and a handful of fresh berries on top. It’s simple, classic, and always hits the spot. When I’m making it for a holiday brunch, though, I love going all out. Some people like to load up on toppings, so I’ll set the table with a little something for everyone—fresh whipped cream, caramel or chocolate sauce, chopped pecans, and of course, extra berries and syrup.

For a savory balance, I like to serve it alongside sweet & spicy brown sugar bacon or some quick air fryer bacon. And if it’s a special occasion like Mother’s Day, I’ll add a quiche Lorraine or some classic scrambled eggs to round out the meal. Or better yet, just ask your mom what she wants. Chances are, she’ll appreciate the thought (and the French toast) more than anything else.

I’m a big smoothie lover, but gathering up all the various fruits and powders always feels so tedious. This mango smoothie recipe is super simple, though—no fancy or complicated ingredients required. I always keep frozen mango in my freezer for this smoothie. It just makes me happy and makes me look forward to getting out of bed in the morning!

Tips for Success

  • While milk gives this drink a more creamy flavor and texture, you can make a scrumptious smoothie with just a splash of water or juice.
  • Add a scoop of protein powder to this smoothie for a tasty and nutritious smoothie to keep you going all morning long!
  • If you like your smoothie a little thinner, simply add more milk after blending, and more mango if you prefer it thicker.
  • You can turn this little smoothie into a creamy cocktail. Just add a little bit of tequila or vodka and cheers! You’ve got yourself one dreamy dessert for happy hour!

Notes

*Using frozen rather than fresh fruit makes this smoothie super rich and creamy. It also means we don’t have to add any ice, which can dilute the flavors.
**I recommend almond milk or skim milk to keep this smoothie healthy and low-calorie, but any milk will work. I think coconut would be delish!
***Maple syrup or agave would also work.

These healthy peanut butter energy balls are my favorite mid-day pick-me-up! My peanut butter oat balls are super easy to make with just 7 wholesome ingredients and no baking required! Oats, banana, peanut butter, coconut, flaxseed, chocolate chips, and just a touch of sugar create perfectly balanced energy-boosting protein balls. My kids love eating them as a healthy treat in their lunchboxes, and I love that I can take them with me on the go!

overhead view of healthy peanut butter energy balls on a plate.

This is the time of year when parents are getting their kids ready, teachers are decorating their classrooms, and I… well I’m brainstorming healthy breakfast ideas and snack ideas. Don’t act surprised! Coming up with tasty and healthy treats to pack in school lunches is an important job, and I’m happy to do it.

These healthy peanut butter balls have quickly become a hit with my kids. They think they’re eating cookie dough bites, so it’s a total mom win! Plus, these peanut butter oat balls are great for adults too. Each one has 3 grams of protein and 2 grams of fiber to help fill the gap between meals.

What’s in This Healthy Peanut Butter Balls Recipe?

  • Peanut Butter: Adds protein to these energy balls and helps bind everything together.
  • Banana: Adds a touch of sweetness and moisture to the energy balls.
  • Oats: Old-fashioned oats make these energy balls chewy and delicious!
  • Coconut: Small flake coconut enhances the sweet, dessert-like taste of these energy balls and adds healthy fats. You can also use shredded coconut, but I recommend chopping finer if so.
  • Flaxseed: Ground flaxseeds are a great source of protein, fiber, and omega-3 fatty acids!
  • Chocolate Chips: Mini chocolate chips add a pop of sweet chocolatey flavor.
  • Sugar: Granulated sugar adds just a hint of extra sweetness.
ingredients for healthy peanut butter energy balls.

Tips for Success

  • I have found that creamy, no-stir peanut butter works best. If you choose to use all-natural peanut butter, you will need to stir with some real elbow grease to help everything hold together.
  • If your kids have a nut allergy, you can easily swap out the peanut butter for sunflower butter, or your favorite alternative.
  • I like to make a big batch and store them in the freezer for easy snacking!

How to Store

Store leftover peanut butter balls in an airtight container in the refrigerator for up to 2 weeks or in the freezer for up to 3 months. Let thaw overnight in the refrigerator or for a few hours on the counter before enjoying.

This tasty and beautiful German pancake is baked in the oven-- so easy!

When I have company, I love making a big Dutch baby to share. It’s like a giant crepe with crispy, crunchy edges, and it makes short work of breakfast. This German pancake recipe is made with just 6 ingredients and takes just 30 minutes total– way easier than flipping individual pancakes all morning long. My kids love the taste, and the presentation is pretty enough to impress guests– win, win!

partial overhead view of a cut dutch baby in a rectangular baking pan with lemon slices and strawberries.

In spite of the name, this pancake isn’t Dutch at all. In fact, it’s a German invention, and the name probably stems from the autonym “Deutsch.” It’s like a cross between a popover and a crepe— light, sweet, and eggy with crispy edges. But the best part is that I don’t have to babysit my stove all morning. This German pancake recipe is baked in the oven in one big batch, so everyone has a hot fresh breakfast all at the same time!

What’s in This Dutch Baby Recipe?

  • Butter: Unsalted butter greases the pan so the pancake doesn’t stick.
  • Eggs: Give this pancake structure and help it puff up in the oven.
  • Milk: Adds moisture to the batter.
  • Vanilla: Pure vanilla extract adds warmth and sweetness to the batter.
  • Flour: All-purpose flour gives the pancake structure.
  • Salt: Kosher salt enhances the natural flavor of the pancake.
ingredients for dutch baby German pancake.

Tips for Success

  • Don’t forget to preheat the baking pan to help the pancake puff up and get nice crispy edges.
  • I like to use a blender or food processor to make the batter nice and smooth.
  • If you have the time, I recommend letting the batter rest for 5-10 minutes for a better final texture.

How to Store and Reheat

I recommend enjoying your Dutch baby on the day it’s made, but leftovers will keep for up to 5 days in the refrigerator or up to 1 month in the freezer. Let thaw overnight before reheating in a 350°F oven for about 10 minutes.

Serving Suggestions

I like to serve my German pancake sprinkled with powdered sugar, drizzled with maple syrup, and topped with a bit of fresh fruit. It’s also great with my homemade lemon syrup or some honey butter. For some protein, I like scrambled eggs or brown sugar bacon.

Make Ahead Tater Tot Breakfast Casserole

I hate waking up after a night of fun and having to make breakfast. It feels like such a bummer when everyone else gets to sleep in. But with this easy tater tot breakfast casserole recipe, I can have breakfast on the table with minimal effort. If I remember to, I can even prep it the night before so all I have to do is pop it in the oven the next morning!

Tips for Beginners

  • You can make homemade tater tots or use tater tots straight from frozen—no need to thaw!
  • You can assemble and refrigerate the casserole (before baking) for up to 12 hours. I like to prep the night before so all I have to do in the morning is pop it in the oven.
  • If the casserole is browning too quickly before the eggs have set, tent it with foil for the remainder of the bake time.

In my opinion, versatile foods are the best foods, and these English muffins are no exception. They’re great for breakfast, lunch, dinner, or even just a snack. I love to make a big batch on Sunday so we have delicious homemade English muffins all week long!

English muffins are so easy to make and so delicious to eat! With just 6 ingredients I almost always already have on hand, I love that I’m never more than a few hours away from crispy, craggy English muffins.

Tips for Beginners

  • Measure the dry ingredients using the spoon-and-level method to avoid dense, dry muffins.
  • When using whole wheat flour, I have found that it’s super important to ensure the dough is properly hydrated. If it is too dry, the muffins won’t rise properly and will end up dense without those signature holes.
  • Cut the muffins with a fork to get that craggy texture; using a knife will compress the muffins.
  • Make sure the milk is not too warm or too cold; otherwise, the yeast won’t activate.
